The Best Homemade Taco Soup

Ingredients
  

  • 1 pound ground beef
  • 1 medium onion diced
  • 2 tsp minced garlic or 1 tsp garlic powder
  • 2 cans chili beans (not drained)
  • 1 can corn (not drained)
  • 1 can fire roasted tomatoes
  • 1 cup chicken broth or beef broth
  • 1 packet taco seasoning or homemade taco seasoning
  • 1 tbsp Ranch powder
  • salt and pepper to taste
  • add extra cumin, chili powder, onion powder, or garlic if needed.

Method
 

  1. Start by heating a large soup pot over medium heat. Add the ground beef and cook, breaking it up into small pieces as it browns. Once fully cooked, drain any excess fat.
  2. To the browned beef, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is soft and translucent. If you don't have minced garlic, just add a teaspoon of garlic powder.
  3. Now add the undrained chili beans, corn, diced fire roasted tomatoes, and broth to the pot. Stir everything together until well combined.
  4. Sprinkle in the taco seasoning, ranch powder, and add a pinch of salt and pepper. Adjust the spices to suit your family’s taste. If you like a little heat, toss in some cayenne pepper or diced jalapeños.
  5. Bring the soup to a gentle boil, then reduce the heat to low. Let it simmer for about 20-30 minutes to allow the flavors to meld together. Stir occasionally and taste-test along the way.
  6. When the soup is ready, ladle it into bowls and let everyone top their serving just the way they like it.
