Method
- Heat a large skillet over medium-high heat and melt the butter or oil.
- Add sliced smoked sausage and cook until browned.
- Stir in onion and sauté until softened (if using).
- Add drained sauerkraut and season with black pepper and salt.
- Cover and cook for 10–15 minutes.
- Serve hot over mashed potatoes.
