Mediterranean Chickpea Salad with Feta, Black Olives, and Fresh Mozzarella

Ingredients
  

  • 2 15 oz cans chickpeas, drained and rinsed
  • 1 can black olives, drained
  • 1/2 cup feta cheese, crumbled
  • 1 cup fresh mozzarella, cut into bite-sized chunks
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup bell pepper, sliced
  • 1 tbsp parsley optional

Lemon Vinaigrette Dressing

  • 3 tbsp extra virgin olive oil
  • Juice of 1 lemon 2 tbsp of bottled
  • 1 tsp garlic minced 1/2 tsp powdered
  • 1/4 tsp black pepper
  • 2 tsp honey
  • pinch of salt
  • 1 tbsp red wine vinegar

Instructions
 

  • Drain and rinse the canned chickpeas thoroughly. Pat them dry with a paper towel. This helps the dressing cling to them better and prevents a watery salad. Add the chickpeas to a large mixing bowl.
  • To the bowl, add: whole black olives, crumbled feta cheese, fresh mozzarella chunks, thinly sliced red onion, diced bell pepper, and parsley. (if using)
  • In another small bowl, whisk together: olive oil, fresh lemon juice, red wine vinegar, minced garlic, honey, black pepper, and a pinch of salt.
  • Pour the dressing over the salad and gently toss to combine.
  • Let the salad sit for 20–30 minutes before serving. This resting time allows the chickpeas to absorb the lemon dressing and develop even more flavor. You can also make it the day before. The longer it sits, the better it tastes!
