Ingredients

  • 2 lbs ground beef (80/20 works best)
  • salt and pepper to taste
  • 12 deluxe cheese slices

Method

  1. Take about 3 ounces of ground beef and roll it into a ball. Place it on a plate or parchment paper. Using your hand or a flat spatula, press it down as thin as you can. Thin patties cook quickly and develop a better crust.
  2. Set your skillet over medium-high heat. Allow it to preheat for at least 3–4 minutes. A properly heated pan is crucial for that golden-brown sear.
  3. Sprinkle each side of the patties generously with salt and pepper just before cooking. This keeps the flavor right on the surface.
  4. Place the patties into the hot pan. You should hear a loud sizzle. Do not move them while they cook. Let them sear for about 4 minutes. Flip each patty only once, and cook the other side for another 3–4 minutes.
  5. Once the patties are nearly done, place a slice of deluxe cheese on each one. Cover the pan with a lid for about 30 seconds to help the cheese melt perfectly.
  6. Place the cheesy patties on toasted buns and add your favorite toppings!
