Cake Layer
- 3 ripe bananas, mashed
- 1 cup brown sugar
- 1/2 cup softened butter
- 2 eggs
- 1 1/2 tsp vanilla extract
- 2 cups flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
Cream Cheese Layer
- 1 8 oz pack cream cheese, softened
- 1/2 cup powdered sugar
- 2 tbsp milk
- 1/2 tsp vanilla extract
- dash of salt
Streusel Topping
- 1/2 cup softened butter
- 1/2 cup brown sugar
- 1 cup flour
- 1 tsp cinnamon
- 1/4 tsp salt
Prepare the Cake Batter
In a large mixing bowl, mash the ripe bananas until smooth.
Add the brown sugar, softened butter, eggs, and vanilla extract. Mix until everything is completley mixed in.
Add the flour, baking powder, baking soda, and salt. Stir until just combined—do not overmix. Some lumps are normal.
Set the batter aside and begin making the cream cheese layer.
Prepare the Cream Cheese Layer
In a separate bowl, combine the softened cream cheese, powdered sugar, cream, vanilla extract, and a dash of salt. Mix on high speed until smooth and creamy.
Set aside and begin making the streusel topping.
Make the Streusel Topping
In another bowl, combine the softened butter, brown sugar, flour, cinnamon, and salt. Use your fingers to mix until crumbly. You can also use a fork so you don't get dirty!
Assemble the Cake
Preheat your oven to 350°F (175°C).
Grease a 10 x 14 baking pan with butter. Then begin to pour half of the banana cake batter into the pan and spread evenly. The layer will be thin.
Next, spread the cream cheese mixture evenly over the banana batter.
Carefully spread the remaining banana cake batter over the cream cheese layer without mixing the layers together.
Sprinkle the streusel topping generously over the entire cake.
Bake the Cake
Bake in the preheated oven for 30 minutes.
Check doneness by inserting a butter knife or toothpick into the center; if it comes out clean, the cake is ready. If the cake needs more time, bake for an additional 4 minutes and check again. Be careful not to overbake, as the cake should remain moist.
Once done, let the cake cool completely in the pan.Cover with aluminum foil and store at room temperature for up to 3 days. You can also cut the cake into slices and store it in an airtight container.
