How to Make Banana Muffin Cake With Cream Cheese Layer

Ingredients
  

Cake Layer

  • 3 ripe bananas, mashed
  • 1 cup brown sugar
  • 1/2 cup softened butter
  • 2 eggs
  • 1 1/2 tsp vanilla extract
  • 2 cups flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt

Cream Cheese Layer

  • 1 8 oz pack cream cheese, softened
  • 1/2 cup powdered sugar
  • 2 tbsp milk
  • 1/2 tsp vanilla extract
  • dash of salt

Streusel Topping

  • 1/2 cup softened butter
  • 1/2 cup brown sugar
  • 1 cup flour
  • 1 tsp cinnamon
  • 1/4 tsp salt

Instructions
 

Prepare the Cake Batter

  • In a large mixing bowl, mash the ripe bananas until smooth.
  • Add the brown sugar, softened butter, eggs, and vanilla extract. Mix until everything is completley mixed in.
  • Add the flour, baking powder, baking soda, and salt. Stir until just combined—do not overmix. Some lumps are normal.
  • Set the batter aside and begin making the cream cheese layer.

Prepare the Cream Cheese Layer

  • In a separate bowl, combine the softened cream cheese, powdered sugar, cream, vanilla extract, and a dash of salt. Mix on high speed until smooth and creamy.
  • Set aside and begin making the streusel topping.

Make the Streusel Topping

  • In another bowl, combine the softened butter, brown sugar, flour, cinnamon, and salt. Use your fingers to mix until crumbly. You can also use a fork so you don't get dirty!

Assemble the Cake

  • Preheat your oven to 350°F (175°C).
  • Grease a 10 x 14 baking pan with butter. Then begin to pour half of the banana cake batter into the pan and spread evenly. The layer will be thin.
  • Next, spread the cream cheese mixture evenly over the banana batter.
  • Carefully spread the remaining banana cake batter over the cream cheese layer without mixing the layers together.
  • Sprinkle the streusel topping generously over the entire cake.

Bake the Cake

  • Bake in the preheated oven for 30 minutes.
  • Check doneness by inserting a butter knife or toothpick into the center; if it comes out clean, the cake is ready. If the cake needs more time, bake for an additional 4 minutes and check again. Be careful not to overbake, as the cake should remain moist.
  • Once done, let the cake cool completely in the pan.Cover with aluminum foil and store at room temperature for up to 3 days. You can also cut the cake into slices and store it in an airtight container.
