- 1 3/4 cup freshly milled Prairie Gold wheat flour, 225 grams
- 1/2 cup unsweetened cocoa powder, 45 grams
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 2 large eggs
- 3/4 cup honey, 225 grams
- 1/2 cup melted butter or olive oil, 113 grams
- 1/4 cup milk, 60 grams
- 2 tsp vanilla extract
- 1 1/2 cups shredded zucchini, 180 grams
- 1/2 cup chocolate chips optional
Preheat the oven to 350°F. Grease a 9-by-5-inch loaf pan or line it with parchment paper.
Whisk the freshly milled Prairie Gold flour, cocoa powder, baking soda, baking powder, and salt together in a medium bowl.
In a separate large bowl, whisk the eggs, honey, melted butter, milk, and vanilla until combined.
Add the dry ingredients to the wet ingredients and stir until almost combined.
Let the batter rest for 30 minutes to allow the freshly milled flour to absorb the liquid.
Fold in the shredded zucchini and optional chocolate chips. Avoid overmixing the batter.
Bake for 50–60 minutes. The bread is done when a toothpick inserted into the center comes out without wet batter.
Cool in the pan for 15 minutes before transferring the bread to a wire rack.
