For the Kabobs
- 2 lbs boneless, skinless chicken thighs
- 2 bell peppers
- 1 large onion
- 8 oz mushrooms cleaned and halved
For the Marinade
- 1/2 cup light olive oil
- 2 tbsp Greek Seasoning I used Kinder's The Greek Blend
- 2 tsp Knorr's chicken bouillon
- 1/2 tsp pepper
- 1/2 tsp salt
In a medium bowl, whisk together the olive oil, Kinder’s The Greek Blend seasoning, Knorr’s chicken bouillon, black pepper, and salt until well combined.
Cut the bell peppers and onion into 1.5-inch chunks. If your mushrooms are large, slice them in half; if they are small, leave them whole.
Next, dice your chicken into 1.5-inch pieces.
Add the chicken pieces and chopped vegetables to the marinade, ensuring everything is fully coated. Cover and refrigerate for at least 30 minutes, but for best results, let it marinate for 2-4 hours. This allows the flavors to fully infuse into the meat and veggies.
If using wooden skewers, soak them in water for at least 30 minutes to prevent burning on the grill. Thread the marinated chicken, bell peppers, onions, and mushrooms onto the skewers, alternating between ingredients for an even distribution. Leave a little space between each ingredient to ensure even cooking. Heat your grill to medium-high heat (about 375-400°F).
Place the kabobs on the preheated grill and cook for 10-15 minutes, turning every 3-4 minutes. Grill until the chicken reaches an internal temperature of 165°F and has a nice char on the outside.
Remove from the grill and let rest for a few minutes before serving.
Tips for the Best Grilled Chicken Kabobs
- Use chicken thighs instead of chicken breasts – They are juicier and more flavorful.
- Don’t skip the marinating time – It enhances the flavor and keeps the chicken moist.
- Avoid overloading the skewers – Leave some space between pieces for even cooking.
- Use a meat thermometer – Ensuring the chicken reaches 165°F prevents undercooked or overcooked chicken.
- Let them rest – A few minutes of resting time helps retain the juices in the chicken.
