Ingredients
  

  • 2 lbs Portabella Mushrooms chopped
  • 1/2 cup water
  • 1 cup white vinegar or vinegar of choice
  • 1/4 tsp sugar
  • 1/2 tsp salt
  • 2 tbsp garlic-infused olive oil
  • 1/4 tsp Italian seasoning
  • Parmesan cheese to your liking.

Method
 

  1. Wash the mushrooms thoroughly to remove any dirt or debris. Then chop them to your desired thickness.
  2. In a medium-sized pot, bring the vinegar and water to a boil over medium heat. The combination of these two ingredients will form the base of your marinade. Be careful not to breathe in the steam. It hurts!
  3. Once the liquid is boiling, add the chopped mushrooms to the pot. Let them boil for about 5 minutes, this helps soften the mushrooms and allows them to soak up the tangy flavor of the vinegar.
  4. After boiling, carefully strain the mushrooms to remove excess liquid. Allow them to cool.
  5. Transfer the strained mushrooms to a large bowl. Add the garlic-infused olive oil, sugar, salt, Italian seasoning, and Parmesan cheese.
  6. Mix everything together thoroughly to ensure the mushrooms are evenly coated with the marinade.
  7. Enjoy right away while still warm, or cool them in the refrigerator for a few hours to enhance the flavor.
  8. Store in an air tight container for 5 days.
